TK Lounge Closing Procedure

Make sure all tables & chairs are clear and have been wiped
Have all nip pourers and jiggers been removed from bottles and placed in soda water to soak?
Put tables & chairs back to their original set up
Take menus, water glasses & jugs off bar top. Swap dinner menus for lunch menus and make sure specials are updated for the morning
Check if there is enough wrapped cutlery & back up knives (including dinner & steak), forks and spoons
Scrub down bar with hot soapy water, then rinse with clean hot water and dry with tea towel. Including drip trays and speed racks
Plug all beer taps
Finish washing glasses and pack away on correct shelf
Scrub down both sinks and stack washed drip trays in sink
Empty and Wash ice wells
Pack down service area and store away correctly. Refill Straws and glad wrap them
Pump and date open wine bottles
Leave bins for cleaners to throw out in the morning, just tie rubbish bins to prevent pests
Dirty cloths to be taken to BOH crate. Clean cloths brought in for morning and folded
Turn off all TV's with TV Remote
Deposit tills or ask DM to do tills
Leave coffee machine for DM for after hour coffees. On Monday's clean out with coffee cleaner (only needs to be done once a week)
Have all clean nip pourers and jiggers been placed back onto bottles?
Leave any required notes for morning opener
Ask DM or Supervisor if you can clock out
